Let’s explore together the wonders of French Countryside cooking. Learn how to bake a delicious Pain de Campagne (Country Loaf) and a wonderful fruit tart with Crème pâtissière.
A Pain the Campagne is an everyday bread enjoyed by French people in almost every meal. Bread is always in their table to accompany dishes together with a glass of wine. A Pain the Campagne can be made with sourdough or with fresh/dry yeast, with the use of strong white flour and rye flour. The polish (preferment) will be prepared the night before.
A Crème pâtissière fruit tart is a delicious dessert that you can find in every Patisserie in France. The base is made with short crust, the filling with crème pâtissière and decorated with fresh fruit and glazed with handmade syrup.
Please note: This course is delivered online; you must be able to join in with Microsoft Teams at the time the course takes place. You will need a device to access the lessons and WIFI.
Previous Experience and Knowledge Needed?
No previous experience is required as the course will teach you all the skills you need.
Learning Outcomes:
By the end of the course, you will have the opportunity to:
- Develop an awareness of all the tips and tricks involved in French Baking
- Enhance your listening skills
- Follow instructions successfully
- Develop good organisational skills (such as having the equipment and ingredients ready before the lesson starts)
- Identify the correct yeast for the pain the campagne
- Weigh the ingredients precisely which is a key factor when baking
- Learn about the correct temperature and time.
- Learn how to knead properly so that you develop the gluten in the dough
- Develop scoring skills to do it in the correct angle.
- Make the polish (preferment) the night before. (this will be emailed to you the day before the lesson starts)
Extra costs on the course for example textbook, materials or equipment:
- Weighing scales
- Measuring cups
- Measuring spoons
- A baking tray (34 by 26 cms. approximately)
- A flan or tart tin ( 21 cms. approximately)
- A rolling pin
- Grease proof paper
- A medium saucepan
- A tea towel
- A hand whisk
- A breadbasket or a medium size bowl
- A greater
- A wooden spoon or a silicone spatula
- Ceramic baking beans or rice, beans, or chickpeas to blind bake the tart pastry
For the first session you will need to bring:
Pain the Campagne: white strong flour, light rye flour, (fresh yeast can be found in any bakery) if not dry yeast is fine.
Fruit tart: Plain flour, sugar, eggs, milk, corn flour, fresh fruit such as strawberries, blueberries, and raspberries. (Or any other fruit of your taste)
The recipes with ingredients will be sent via email.
On completion of this course, what might your next steps be?
You may wish to embark on more advanced baking and patisserie courses.

Let’s explore together the wonders of Greek baking. Learn how to bake a delicious Greek Honey Cake and some delectable sesame bread rings.
A Greek honey cake is a very light and moist cake that melts in your mouth. Its flavour is unique as it combines the sweetness of the honey with the tanginess of oranges making this a sublime combination. It is a great option to entertain as you do not need a mixer and it is glazed with an orange syrup which helps to keep it fresh and moist.
Sesame bread rings are very popular in Greece as they are eaten by people in the morning for breakfast or as a quick snack on their way to work. They are a wonderful complement for a coffee, and they keep for a long time so they are the perfect make ahead snack. They are delicious and a real gem of Greek baking.

For the first session you will need to bring:
Greek honey cake: caster sugar, honey, orange juice and zest, eggs, butter, vanilla extract, yogurt, self-rising flour, almond flour and baking powder,
Sesame bread rings: Strong white flour, plain flour, salt, sugar, honey, dry or fresh yeast, sesame seeds, unsalted butter
